Equipment

Ingredients

  • 10โ€“12 small green onions (trimmed to fit your pan)

  • 3 red chillies, sliced

  • 2โ€“3 tbsp oil (for frying)

  • ยพ cup all-purpose flour

  • ยผ cup cornstarch

  • ยฝ tsp salt

  • 1 cup water

  • 2 whole eggs

  • 1 tbsp sugar

  • 2 tbsp vinegar

  • 2 tbsp soy sauce

  • ยผ tsp salt

  • 2 red chillies, chopped

  • ยฝ tbsp sesame seeds

Instructions

Prep the Ingredients

Trim green onions so they fit the pan neatly.

Slice red chillies.

Mix flour, cornstarch, salt, and water until they are smooth.

Beat eggs in a separate bowl.

Whisk together all dipping sauce ingredients and set aside.

Cook the Pajeon

Heat oil in a non-stick pan on medium heat.

Lay green onions in a single layer so that they will sizzle beautifully.

Pour half the batter over the onions, spreading it lightly.

Add half the beaten eggs on top.

Scatter red chillies.

Let the bottom turn golden and crisp.

Flip gently and cook for another 1โ€“2 minutes until evenly crispy.

Repeat with the remaining batter and onions.
