Equipment

  • Mixing bowl

  • Cutting board

  • Knife

  • Pan (non-stick recommended)

  • Small bowl (for dipping sauce)

  • Plate or board for wrapping

Ingredients

  • 10–12 rice paper sheets

  • 350 g minced chicken

  • 4 green onions, chopped

  • 5 cloves garlic

  • 1-inch piece ginger

  • 1 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tbsp sesame oil

  • 1 tbsp cornstarch

  • ½ tsp salt

  • ½ tsp pepper

  • Water to soak the rice paper

  • Oil to fry

  • 1 tsp sesame seeds

  • 1 tsp chilli flakes

  • 1 tbsp green onion

  • 2 tbsp chili oil

  • 3 tbsp soy sauce

  • 2 tbsp vinegar

  • 1 tsp sugar or honey (optional)

Instructions

Prepare the Filling

Chop the green onions finely.

Pound the garlic and ginger into a paste.

Add everything from chicken, spices, sauces, and cornstarch into a bowl. Mix well and set it aside.

Make the Dipping Sauce

Combine chili oil, soy sauce, vinegar, honey/sugar, sesame seeds, and green onions.

Stir and keep aside.

Wrap the Dumplings

Dip a rice paper sheet into water, very quickly for just 1 sec.

Place it on your working board.

Add a spoonful of filling.

Fold left → right → bottom → top, until you form a square or rectangle. Repeat until all dumplings are wrapped. But I suggest you fold it and put it onto the heated pan. If you are wrapping and setting it aside then put it on an oiled plate or else it would stick.

Pan-Fry Until Crispy

Heat a little oil in a pan on medium heat.

Place dumplings gently.

Cook 2–3 minutes per side until golden and crunchy.

Let them rest for a minute before serving.

Notes

For the crispiest result, fry on medium heat and let the dumplings rest for 1–2 minutes before eating. If you're unsure about wrapping, watch the accompanying video since the visual makes everything easier.
