Equipment

  • Mixing bowls

  • Mortar & pestle

  • Knife & chopping board

  • Plate or tray

  • Frying pan

  • Strainer or slotted spoon

Ingredients

  • 1½ blocks firm tofu

  • 1 tsp salt (adjust to taste)

  • 1 tsp black pepper

  • 1 tsp chilli powder

  • ½ tsp cumin powder

  • 5 cloves garlic

  • 1-inch ginger

  • ¼ cup all-purpose flour

  • ¼ cup cornstarch

  • ½ cup water

  • 1 bowl unsweetened cornflakes, crushed

  • Oil for frying

  • Fresh coriander, chopped

  • ½ lemon

Instructions

Prepare the Tofu

Cut tofu into small cubes.

Pat dry thoroughly, moisture prevents crispiness.

Grind garlic, ginger, and salt into a smooth paste.

Add half the chilli powder, pepper, and all the cumin.

Toss tofu gently in the marinade.

Let it sit for 10–15 minutes.

Make the Batter

In a bowl, mix flour, cornstarch, remaining pepper, chilli powder, and water.

Whisk until smooth and thick, not runny.

Crush cornflakes and place them in a separate bowl.

Coat & Fry

Pour batter over marinated tofu.

Rest for 10 minutes so the coating sticks.

Dip each tofu cube into the crushed cornflakes and coat well.

Heat oil over medium flame.

Fry tofu in batches until golden and crispy.

For extra crunch, increase heat and fry again for 1 minute.

Finish & Serve

Drain tofu on a paper towel.

Sprinkle fresh coriander.

Add a squeeze of lemon.

Serve immediately with your favorite dip.
